Makes about 1 cup
Here is some help with your healthy eating New Years resolutions! This is a lower-in-fat creamy dressing. It is great on grain salads or leafy salads, both hearty and light.
- ¾ buttermilk
- 2 TBSP olive oil
- 2 TBSP avocado oil (or olive oil)
- 1 TBSP lemon zest
- 1 TBSP fresh lemon juice
- 1 TBSP raw honey
- 1 tsp rice vinegar
- Pinch of ground pepper
- ¾ tsp salt
Place all ingredients in a jar with a screw on lid, or in your salad dressing jar, and shake vigorously until honey and salt are blended into liquid. Keeps in fridge for about 10 days - depending on the freshness of your buttermilk. Enjoy!
